Chili muffins



This time I have prepared some muffins, but savory ones with courgettes and some other ingredients which I will reveal later:)
I really wanted to try this recipe for a while but as it can’t be eaten as a main dish, I had to make them when I have enough time to prepare something else as well.
I made some soup and as I had some courgettes left in the fridge, so decided that it is a good time to try out the recipe I found, I think on the BBC website.
I added a few things I thought will suit the main ingredients and I am very pleased with the result.
So here is the recipe and some images as usual:
300gr self rising flour
150gr cheddar cheese
150gr grated, peeled courgette
pinch salt
pinch black pepper
1 red chili,deseeded and chopped very small
200ml milk
2 eggs
3 spring onions, chopped finely
1 1/2tsp baking powder
Handful pumpkin seeds
Sift the flour and the baking powder in a large bowl.
Add the grated cheese and the spices.
Mix in another bowl the eggs with the milk and add to the dry ingredients, put the vegetables plus the chili.Stir very gently and spoon in the prepared beforehand muffin cases.
Bake in 180C for 30 minutes or till golden and well risen.





It was great fun for the little one too, as it is quick and fairly children - friendly recipe.
Will see now if the big boy will enjoy them for dinner with a bowl of hot soup...

I often make the sweet muffins, but rarely the savoury versions. I am liking this cos of the chilli addition.
