Easy starter with aubergines and something else

After a lovely weekend and very creative one indeed,I am back full with ideas for my new hobby - using my new-old sewing machine.
Along with cooking I have been making a few other things which I will share with you!
Well, after years and years of sewing free days and months, I finally got back to it with more passion and patience too.
It will take me while to get back on track and remember the thinks I once knew.
Fortunately my mum and aunty are great in this hobby and they have even earned money with it, so I have them by hand to help me.
They are great at cooking too!
Sometimes I think they are my Gurus, if this is possible to be multiple, huh.
Anyway.
Here is my little food addition to my post.
I have been willing to share this very easy and yummy recipe for a while, but I have no idea what stopped me.
I can't give exact amount as I always make different quantity aubergines.

This time I used 3 aubergines, cut into 1cm circles, brushed on both sides with extra virgin olive oil and grilled on a pan.
Mix 2 tsp honey, 2tbsp balsamic vinegar, 5-6 tbsp olive oil, salt and chopped bunch of parsley, crushed 3 gloves garlic.
Put one layer aubergines in a storage bowl, drizzle generously with the dressing and repeat with the rest of the vegetables.I keep the parsley separate as its easier to sprinkle.

Could be done with courgettes too.
