Walnut and Coffee cake












I am sure you know what I am talking about- when you wake up in the morning and have that earge to have something sweet, with texture but not dry.
That funny feeling that you have to make it right there and then. So I woke up exactly with that thought in my head. I knew exactly what I wanted to make. As I have never made it before...
So here comes my good friend, quick text and she gives me the recipe. She makes it so well and I thought of her straight away! The recipe I am sharing with you is actually her recipe with a little twist which I added to it ( as I didn’t have enough of the ingredients).

Here it is:



250gr Self R flour + 3 tbsp as extra
250gr butter
250gr light brown sugar
5 eggs
2 super strong espresso shots
140gr walnuts- chopped
35gr hazelnuts- chopped
As usual, mix the butter and sugar till light and fluffy.
Add the eggs slowly, then the flour. The chopped nuts and the coffee next. As it was my first time making it I noticed that it looked a bit curdled at this stage, so I added the extra tbsp-s flour and I fixed it.
So baked it in 260^ but I cannot be 100% sure as I have gas oven and still getting used to it...I baked it for over 45mins but was checking it after the first 25mins.
It turned out to be super fluffy and extremely delicious!
So thank you my lovely Rebecca for the recipe. I will be making it again very soon!

PS: I am sorry for the bad photo but I had to dig in and eat it.  Then I wasn't in the mood to take proper image as I had to eat the "model" again.
